today i made my very first risotto ever🍚 and it went better than expected! i always wanted to cook risotto but i thought it would take me ages. well, it took ages but it was not very complicated at all! it made a litte fun too 😋
if you want to try it out, here is the recipe:
you need (for about 4 or 7 servings, depends on how hungry you are):
- 2 onions
- olive oil
- 500 g risotto rice
- 70 g ramson
- 600 ml vegetable broth
- 125 g grated parmesan
- 500 ml white wine
first you put some olive oil into a big pot and roast the chopped onions for about 30 seconds. then you fill it with rice and stir it until it looks glazed. you roast it again (if you need you can add more olive oil) and then refresh it with the wine. let it cook for about 10 minutes. while you do that, you can make the broth and cook it until it is hot.then add it in about 3-4 parts to your rice. finally, when most of the liquid is vaporized, you add the ramson (minced) and the parmesan to your risotto. then you just have to cook it until it “looks like a risotto”(this is the part that can take ages). don’t forget to stir all the time during the cooking so your rice does not burn.
you can taste the risotto during the cooking and check if you need to add some salt or not. if you don’t like wine just put in the half and add more broth or leave it out and just cook it with broth (don’t forget that you need to add the missing amount of wine to your broth to have enough liquid for the rice to cook). you can mix onions (i took some white and some red) and add some other vegetables like tomatoes or zucchini (be creative!).
